According to <a style=\"font-weight: bold;\" href=\"https:\/\/digitaledition.snackandbakery.com\/june-2022\/bread\/?oly_enc_id=7332I2786401I5B&amp;_ga=2.5498224.2109157765.1660138181-684391473.1561039787\" target=\"_blank\" rel=\"noopener\" title=\"Snack Food &amp; Wholesale Bakery\u2019s State of the Industry Report\">Snack Food &amp; Wholesale Bakery\u2019s State of the Industry Report<\/a>, center store sandwich bread sales experienced flat dollar sales and a -6% drop in unit sales for the 52-week period ended March 20, 2022.<\/p>\n<p>The underwhelming results are not entirely surprising, and other categories in the food industry are experiencing similar post-pandemic \u201cnormalizations.\u201d However, the current state of the bread category does require bakeries to mine every efficiency and consumer trend to gain a competitive advantage and increase sales.<\/p>\n<p>Here are five things bread bakers can do to maximize their bread operations.<\/p>\n<p><strong>1. Focus on Innovation<\/strong><\/p>\n<p>Sliced bread has been around for ages, but there is still innovation to be found in the bread category. For example, one of the bright spots in sandwich bread this year comes from Evansville, Indiana-based Lewis Bakeries, which saw a 15% increase in dollar sales due to the success of its <a style=\"font-weight: bold;\" href=\"https:\/\/www.lewisbakeshop.com\/product-tag\/half-loaf\/#loaf\" target=\"_blank\" rel=\"noopener\" title=\"\u00bd loaf format\">\u00bd loaf format<\/a>.<\/p>\n<p>Half-loaf formats are gaining in popularity with bakers due in part to advances in packaging machinery that allows for bakers to produce full- and half-size loaves on the same equipment. For example, the <a style=\"font-weight: bold;\" href=\"\/en\/blog\" title=\"Hartmann line of slicers and baggers\">Hartmann line of slicers and baggers<\/a> easily accommodates multiple loaf sizes with minimal changeover.<\/p>\n<p>Flowers Foods\u2019 brand, Dave\u2019s Killer Bread, is known for its innovative loaves, and the company is not resting on its laurels. The brand\u2019s recently launched <a style=\"font-weight: bold;\" href=\"https:\/\/www.daveskillerbread.com\/epic-everything-breakfast-bread\" target=\"_blank\" rel=\"noopener\" title=\"Epic Everything Organic Breakfast Bread\">Epic Everything Organic Breakfast Bread<\/a> steals a popular flavor from the bagel category and brings it to the bread aisle.<\/p>\n<p>Another<a href=\"https:\/\/www.snackandbakery.com\/articles\/99021-sea-and-flour-introduces-carb-positive-carbon-negative-line-of-baked-goods\" target=\"_blank\" rel=\"noopener\" title=\"innovative launch\"> innovative launch<\/a> comes from the new company Sea and Flour, which has an intense focus on sustainability. The company launched a line of \u201ccarbon-negative\u201d breads using a formula that blends sea plants with common grains and flours.<\/p>\n<p><strong>2. Increase Automation<\/strong><\/p>\n<p>Costs for ingredients are skyrocketing and labor wages are increasing while the labor pool decreases. It\u2019s tough for commercial bakeries to maintain profitability under these circumstances, but it\u2019s not impossible. Step one: <a href=\"\/en\/blog\/automating-subprocesses-in-a-high-volume-bakery-facility\" title=\"automate your subprocesses\">automate your subprocesses<\/a>.<\/p>\n<p>Analyze the number of operators needed on your fresh bread production line. Most likely, your packaging, loading and distribution areas are very labor intensive. Fortunately, these subprocesses can be automated while maintaining the integrity of the bread. Toufayan expanded the Keto craze to the flatbread category with the recent launch of its<a href=\"https:\/\/toufayan.com\/product\/keto-pita\/\" target=\"_blank\" rel=\"noopener\" title=\"Keto Pitas\"> Keto Pitas<\/a>, <a href=\"https:\/\/toufayan.com\/product\/keto-flat-bread\/\" target=\"_blank\" rel=\"noopener\" title=\"Flat Breads\">Flat Breads<\/a> and <a href=\"https:\/\/toufayan.com\/product\/keto-wraps\/\" target=\"_blank\" rel=\"noopener\" title=\"Wraps\">Wraps<\/a>. The company\u2019s formulation consists of oat flour and a keto base that includes resistant wheat starch, wheat gluten, wheat protein isolate, oat fiber and other ingredients.<\/p>\n<p><strong>4. Bimbo Bakeries has done an excellent job of this with its <a href=\"https:\/\/bimbobakehouse.com\/en-us\/retail-products\" target=\"_blank\" rel=\"noopener\" title=\"Bimbo Bakehouse\">Bimbo Bakehouse<\/a> division that serves in-store bakeries and foodservice outlets.<\/p>\n<p>For example, the company\u2019s Goldminer California Sourdough Bread looks, smells and tastes like it was freshly baked at an in-store bakery. In addition to wide-format loaves, the Goldminer brand also supplies boules, rolls and baguette style formats.<\/p>\n<p>By servicing multiple categories, bakeries can weather flat or falling sales in retail with minimal production line modifications.
